Sauce Class Recap

Thanks to everyone who was able to make it to the cooking class last week at the Nordicware Store! The class was all about making easy sauces and dressings to add to your salad, dinners, vegetables, etc. The participants were given several recipes and sampled some of them. For those of you who wanted to make it but weren’t able to, here are a couple of the recipes that were shared with the class:

Maple Dijon Glaze/Dressing

  • ¼ c Maple syrup
  • ½ c Dijon mustard
  • 2 T Apple cider vinegar
  • ¼ C Olive oil
  • Salt & Pepper, to taste

Whisk all ingredients together until blended smooth. Adjust seasonings to taste. This recipe makes a great sauce for chicken or pork. You can also add more oil and vinegar for a delicious salad dressing.

Spicy Peanut Dressing

  • ½ c peanut butter, or more to taste
  • 2 T lemon juice
  • 2 T soy sauce or tamari
  • 1 clove garlic, minced 
  • 2 t fresh ginger, minced 
  • ½ c hot water
  • ¼ c cider vinegar
  • 2 T honey or other sweeter
  • 1 pinch red pepper flakes
  • Salt & pepper, to taste

Directions: Using a food processor or blender, mix all ingredients until blended. Add water to thin out the sauce if needed; Adjust seasonings.

Creamy Chipotle Lime Dressing:

  • 1 ½ cups sour cream 
  • 3 T olive oil
  • 2 T lime juice + zest
  • 2 T water or milk 
  • 2 teaspoons chipotle powder
  • 2 teaspoons chili powder
  • ½ teaspoon cumin
  • Salt & Pepper, to taste

Whisk all ingredients together until blended smooth. Adjust seasonings to taste. The sauce is delicious with grilled vegetables or meat. It’s also great for taco salads!

There you have it. These three sauces can easily adapt to a sauce for a dinner entree, a salad, or a dipping sauce. Enjoy!
