Who doesn’t love a good, crunchy pickle? This easy refrigerator pickle recipe is quick to throw together and doesn’t require canning. It’s great for snacking, sandwich or brat topping, or mix with chickpeas and quinoa for an awesome deli salad. Enjoy!
Pickled Vegetable Recipe
Ingredients:
2 cups Green cabbage, shredded
1 Carrot, thin-sliced
1 Red Pepper, thin-sliced
2 Cucumber, thin-sliced
2 cups Cauliflower, sliced
1 cup Cider vinegar
2 Tablespoons Salt
2 Teaspoon Dill weed (dried is fine)
Directions:
Combine all ingredients in a large container or mixing bowl. Mix well. Cover and refrigerate, and allow to marinate for a few hours or overnight. Stir occationally;adjust flavors the following day by adding salt vinegar, or pouring off brine and adding water. Store refrigerated for up to three months.
