On a hot summer day, it’s hard to top a nice, thick slice of chilled sweet watermelon. That is, unless, you decide to top it with some tangy goat cheese, toasted walnuts, balsamic vinegar and olive oil… because that would just be delicious!

Take your watermelon to a whole new level of fancy by topping it with your own favorite olive oil, nuts, dried fruit, or whatever you have on hand. Slice a watermelon into 1/4 inch thick wedges, with or without the rind. Arrange the slices over a bed of greens on a platter. Sprinkle generously with toppings (I used dried cranberries, Feta cheese, and toasted pecans in this picture). Drizzle with balsamic vinegar and olive oil, and finish with a bit of salt and fresh-cracked pepper.
The best part about this dish is that it’s flexible, so you can make it your own. Here are some other topping ideas to try:
-Fresh thyme, honey, chevre, and toasted pine nuts
-Fresh rosemary, asiago cheese, and prosciutto with pecans
-Basil-mint blended oil, dried apricots, toasted hazelnuts, and shaved manchego
