Fruit & Nut Cheese Log Recipe

Ingredients:

-1 package (8 ounces) cream cheese, room temperature

-1 cup Chèvre Cheese (Grated Fontina or Blue cheese would also work)

-1 cup of mixed nuts, toasted and chopped (pistachios, almonds, pecans, macadamia nuts, and walnuts are all great)

-1 cup mixed dried fruit, chopped small (cranberries, raisins, apricots, or currants)

-2 Tablespoons honey

-2 Tablespoons each, fresh rosemary and thyme (divided)

Directions:

In a medium bowl, using an electric mixer, beat cream cheese and chèvre (or other cheese) until blended smooth. Shape into a “log” form. Cover tightly with plastic wrap and refrigerate until firm, 1 to 2 hours.

Meanwhile, in a 9×12 pan or casserole dish, combine chopped nuts and fruit with a teaspoon of chopped fresh rosemary and thyme.

Place the unwrapped cheese log directly on to the nut and fruit mixture, pressing to ensure full coverage. Save any extra loose topping.

For plating, place the cheese log on the center of a platter. Sprinkle the remaining fruit and nut mixture on top, along with a drizzle of honey and fresh herbs. Delish!
